Blueberry Cupcakes with Cream Cheese Frosting

I can’t believe that this week is the 4th of July. The summer is just flying by! I wouldn’t I’m the biggest patriot out there, but I do love the 4th of July. I love the hot weather, the barbecues, the flags, and the most importantly the food. I look forward to the classics every year like hot dogs, hamburgers, ribs, cheesy potatoes, and corn as well as the various cocktails. I wanted to make a dessert that’s simple, yet appropriate for the occasion and I think these blueberry cupcakes are perfect with their white icing and blue blueberries on top. Add some red cupcake liners and you’re ready for whatever 4th-related event you have this week and weekend. Read on for the ingredients and directions to make these tasty cupcakes.

Ingredients

Cupcakes

  • 1 2/3 cup cake flour
  • 3/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup + 2 Tbsp granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 2 large egg whites
  • 1 tsp vanilla extract
  • 1/4 cup buttermilk
  • 1/3 cup sour cream
  • 1 1/4 cup fresh blueberries, plus optional additional for toppings

Frosting

  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 1/2 tsp vanilla extract
  • 2 cups powdered sugar

Directions

Cupcakes

  1. Preheat oven to 350 degrees. In a medium mixing bowl, combine cake flour, baking powder, and baking soda. Whisk for 20 seconds until combined, set aside.
  2. In a bowl of an electric stand mixer fitted with the paddle attachment, cream together butter and sugar until fluffy. Mix in egg, then egg whites one at a time. Add vanilla. Whisk together sour cream and buttermilk until combined. Working in three batches, add 1/3 flour mixture to egg mix. Then add 1/2 of sour cream mix before adding another 1/3 of flour mixture. Add remained of each batch until all combined. Gently fold in blueberries.

Frosting

  1. In the bowl of a stand mixer fitted with the paddle attachment, cream together cream cheese and butter until combined. Mix in vanilla before stirring in the powdered sugar. Continue to whip until desired consistency is achieved.
