Simple Pumpkin Pie

I’m not a huge fan of pumpkin pie but I can’t resist making it during the Thanksgiving holiday. This year, I tried my hand at it for the first time. It was a pretty simple recipe and was super easy to follow, though I definitely left room for improvement. Anyone have a favorite Thanksgiving-time recipe?



  • 1 1/2 cups flour
  • 1/2 cup, COLD shortening or unsalted butter
  • 1/2 tsp salt
  • 2-3 Tbsp cold water
  • Flour for dusting on rolling surface


  1. In a medium bowl, blend together flour, salt and shortening/butter with a pastry blender or for until mixture is in pea-sized clumps.
  2. Slowly add ice water by the teaspoon. Mix by hand or with a fork/spoon.
  3. When dough begins to form a smooth ball, place on floured surface. Knead folding over itself 4-5 times to create layers.
  4. Roll out and place in pie pan.
  5. Filled with topping.

  • 15 oz can pumpkin
  • 14 oz eggnog
  • 2 large eggs
  • 1 tsp pumpkin pie spice
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 9″ unbaked pie crust


  1. Preheat oven to 425 degrees F.
  2. In a small saucepan, combine and slowly heat pumpkin, salt and spices until warm. Stir well.
  3. Take mix off heat and set aside to cool.
  4. Add eggnog and eggs  with pumpkin mix a medium mixing bowl and whisk together until smooth.
  5. Pour into pie crust and bake for 15 minutes.
  6. Reduce temperature to 350 degrees F and bake for an additional 40 minutes.
  7. Allow pie to cool and add whipped cream upon serving.
