Vanilla Cake Roll

    • 2 eggs
    • 3 egg yolks
    • 1/2 cup sugar
    • 1 tsp vanilla extract
    • 1/3 cup sifted cake flour
    • 3 Tbsp corn starch
    • 2 egg whites
    • 1 Tbsp sugar


Vanilla Buttercream

    • 1 cup butter, room temperature
    • 3 cups powdered sugar
    • 1 tsp vanilla extract
    • 1-3 tsp heavy cream


    • 4 oz white chocolate
    • sprinkles


  1. Preheat the oven to 450F degrees.
  2. Line an 17×12 inch jelly pan with parchment paper and set aside.
  3. In a large mixing bowl, add 2 eggs, 3 egg yolks and 1/2 cup sugar. Beat on medium high speed for 3-5 minutes until mix is pale in color and thickened. Add vanilla extract and beat for a few seconds.
  4. Sift the flour and cornstarch into the egg mixture and gently fold it in.
  5. In a separate grease free bowl, add the 2 egg whites and 1 Tbsp sugar and whisk until firm peaks form.
  6. With a spatula, fold the whipped egg whites into the egg yolks and flour mixture.
  7. Pour mixed batter into lined pan and spread evenly. Bake for 6-7 minutes until golden brown.
  8.  Remove baked cake and immediately sprinkle with powdered sugar. Turn over onto a clean dish towel. Remove waxed paper and sprinkle other side with powdered sugar. Roll up cake with towel and place on cooling rack.

Vanilla Buttercream

  1. In a small mixing bowl, add butter beat for 2-3 minutes on medium-high speed.
  2. Lower speed and slowly add powdered sugar 1/2 cup at a time.
  3. After adding all the powdered sugar, increase speed and beat for 2 more minutes.
  4. Add heavy cream until desired consistency is reached.
  5. Gently unroll cake and spread buttercream over surface. Roll back up and refrigerate for a couple hours.
  6. Remove from fridge and spread melted white chocolate over cake roll.
  7. Let the chocolate settle before serving cake.
